Easy Slow Cooker Lentil Sloppy Joes

These sloppy joes are so easy because the foundation of the sauce is pre-made barbeque sauce in a jar. A local family near us started a small operation making and selling their homemade sauce, and it’s low in sugar, contains no artificial ingredients, is vegan, and is delicious! I truly believe the sauce makes this recipe, so if you can’t use Smokin’ T’s original sauce you should probably skip this dish!

 

Ingredients

  • 4 cups low sodium vegetable broth
  • 2 cups dried brown lentils, rinsed and sorted (discard any stones or shriveled lentils)
  • 1 small red onion, finely chopped (about 1 cup)
  • 1 large green or red pepper, seeds and stem removed, diced (about 2 cups)
  • 2 medium carrots, coarsely shredded (about 1½ cups)
  • 2 stalks celery, leaves removed, diced
  • 1½ cups (1-12 oz. bottle) Smokin’ Ts original barbeque sauce
  • 1 6-oz can no sodium tomato paste

Instructions

  1. Add all ingredients to slow cooker and stir well to combine.
  2. Cover and cook on high for 4-6 hours or on low for 6-8 hours, until lentils are tender and fully cooked.
  3. Serve warm on sprouted grain or gluten-free rolls with romaine lettuce, tomato slices and thinly sliced cucumber if desired.
