Make Ahead Yogurt and Fruit Parfaits

As this parfait sits in the refrigerator overnight, the oats soften without cooking, making a quick and easy breakfast to grab on a busy morning. If plain yogurt is too tart for you, try adding your own drizzle of honey or maple syrup to avoid the very high sugar content of prepared fruit yogurts.

  • ½ cup whole rolled uncooked oats, divided
  • ½ cup plain Greek yogurt
  • 1 tsp maple syrup or honey, optional
  • ½ cup fresh fruit such as berries or chopped apples
  • 2 TBSP slivered almonds or other chopped nuts

  1. In a small lidded container such as an 8 oz ball jar, layer ¼ cup oats, then yogurt, maple syrup if desired, remaining oats, fruit and nuts.
  2. Place lid on jar and store in refrigerator overnight. For added convenience, multiple parfaits can be made at once and stored in the refrigerator for up to several days.
